Focassia Bread

2 cups water 1 tablespoon sugar

2 tablespoon yeast

1 teaspoon salt

3 tablespoons olive oil

3-4 cups flour

Put ¾ cup warm water in bowl, add sugar and yeast. Let stand until bubbly. Add salt and olive oil then add the remaining water. Add the flour 1 cup at a time until firm (not sticky). Let rise for 1 hour. Spread and make indents all over the dough. Pour enough olive oil on top to spread around. Add seasonings: garlic salt and oregano. Let stand 10 to 15 minutes and add shredded cheese. Preheat oven to 400*F. Bake on a flat pan for 15 to 20 minutes.
